I have just had new season asparagus, bought at the Farmer's Market this morning, with wonderful grilled lemon sole - also from the Farmer's Market with homemade Hollandaise sauce. Followed by the first of the season's strawberries..............mmmmmmmmmmmmmmmmmmmmm

Sounds yummy. I love asparagus with hollandaise, but I've never made my own. I'll check with Delia for the recipe! Ava xxx here's mine in case Delia's not at home....
3 egg yolks 200g unsalted butter cubed and fairly soft juice of 1 lemon salt 7 pepper to taste
Beat the egg yolks in a bowl over hot water beat the butter a cube at a time until incorporated trickle in the lemon juice beating all the time season to taste
if the sauce splits add a small ice cube and beat well
ENJOY!!

ENJOY!!Alternatively, you can sometimes rescue it if you break another egg yolk into a clean blender, whisk it and then add the curdled mixture slowly, with the blender running. I can vouch for this as PMZ, who is a brilliant cook, did this just the other night when the mixture curdled. It was perfect and a superb accompaniment to English Asparagus.

Another of Delia's aspargus ideas is a slices of parma ham topped with parmesan cheese then rolled around the aspragus and baked. Delicious.

I love asparagus lightly fried in olive oil (local), with a poached egg on top. Served with a slice of rustic bread.
