If you're a Veggie or not, this is a lovely soup. I like to use organic in this because it still makes it a very cheap meal (makes 2 pints)
2 Large Carrots 4 oz Red Lentils 1 onion 1 oz butter (can also use olive oil but butter is best) 1 tablespoon of flour 1 stock cube 2 pints water
Fry the onion in the butter but don't brown it. Add the lentils and stir to coat in the butter. stir in the flour.
add the water and stock cube and bring to near boiling point. Put the lid on the pan and simmer gently for 20 minutes.
Put the soup into a blender/liquidiser and blend for about 20 seconds.
Pour back into pan, add salt and pepper and reheat as needed.
Very simple but very tasty. If you like it chunky then just blend 75% of the soup.

That looks appetising enough for me to try. Only thing I would comment on is that most stock cubes already have a relatively high salt content so if it were me I would not add further salt. Or would but make my own stock. Tiglet has to watch her salt intake carefully due to her diabetes so we have cut right back. As an ex salt junky I was suprised at how quickly I got used to reduced salt - takes about a fortnight - such that I now rarely add salt as we find many of our friends and relatives stick too much [for our taste] in during the cooking.
The thing that fascinates me [since I took up cooking] is that a lot of this sort of cooking takes hardly any more time than do the ready prepared stuff and healthier into the bargain.

That's a truth indeed. I can just about stomach ready meals for a day or two, but nothing beats cooking and it's pleasurable.

BC, do you use dried lentils, and rinse them first? Stoopid question I know! I am still getting used to pulses for veggie tyg! I do a basic lentil stew where I cook the lentils adding the veggies as I go!

Soups are a fantastic food and so easy to be creative with ---basically what is left in the vegetable rack this week and needs using up.
Just one thing BC, re- carrot and lentil soup, what am I supposed to do with the 2 carrots? Throw them at my partner who seems to suffer severe gas problems after eating lentils !!
