Celery

Does anyone have a good recipe or ideas of how to use celery? I have a couple of soup recipies that I use a lot which need celery but inevitably I buy a pack, use two or three stalks and then throw the rest out afer it languishes in my fridge for a week or two.
Can it be cooked and served as a side vegetable? If so, how would be the best way to do this?

It's very good in stews / casseroles - or in stir-fry.
Also can be braised and served as a side dish.... found this on the bbc food site
BRAISED CELERY with OREGANO and GARLIC James Tanner
Ingredients 200g/7oz celery, roughly chopped 100ml/3½fl oz hot vegetable stock ½ onion, finely chopped 1 garlic clove, chopped 1 tsp dried oregano 30g/1oz butter salt and freshly ground black pepper
Method 1. Preheat the oven to 200C/400F/Gas 6. 2. Place the celery, stock, onion, garlic and oregano into an ovenproof pan. Bring to the boil, then reduce to a simmer and cover with foil. 3. Transfer to the oven and cook for 6-8 minutes, or until the celery is tender. Remove from the oven, whisk in the butter and season, to taste, with salt and freshly ground black pepper. 4. To serve, place the braised celery into a serving dish.

Make more soup - celery and stilton is my favourite.
