I have to make a nut free Christmas cake. I have trawled for recipes but not really found anything that looks OK. One recipe assumed that I wanted nut free, gluten free and Vegan to boot Help please. Carl PS Before anyone else says it - I will be wearing protective gloves being a bit of a nut myself.

Carl I have a basic fruitcake recipe that I use as I can't have nuts, I just replace the nut element with more fruit...I'll try and find it for you. Edit : I've just remembered that I gave it to Tigger for her site once, it's here : margeland.co.uk/blog/page/5/?s=cakeI tend to soak the fruit overnight in some brandy which plumps the fruit up nicely.

Why? it sounds very good to me...seriously any cake recipe take out the nuts...replace with DRIED cranberries-cherries-blueberries...?

Mel. is now on ACE inhibitors...Gone & joined the hypertensives and all that...all dried fruits are 'High K'...rich in Potassium...which this medication holds in the blood...a major rethink of the GF (sorry Gluten-Free) diet is required...e.g. Dried Figs, an important source of Calcium (&dietary fibre of course) are now to be restricted...
