I got slightly chefy at the weekend as I was catering dinner for 12. I had the advantage of 2 decent sized ovens to play with (although not convinced by the heat of one of them).
Initially I'd though of doing cottage pie but though that's a bit boring! I decided to do savoury mince pie, with the ubiquitous Rumblethumps & veg.
The chefy bit was I cheated totally with the pie. I batch fried the mince, with onions and leek. I then put it into a grundy tin with gravy (a whole tin of granules plus a couple of Oxo cubes). That, plus the rumblethumps went in the "good" oven for 30 minutes before being transferred to the other one. Meanwhile I'd got 4 sheets of ready-rolled puff pastry. I found a large mug that was just the right size so I could cut out 16 pie tops. I then put these on buttered baking sheets. A quick brush with egg-milk wash and into the oven for 30 minutes.
To serve, simply a good spoonful or two of mince on the plate and a pie top on top. Add the rumblethumps at the side and let them help themselves to veg.
No complaints - they just about licked their plates clean and then finished off the extras!
Pudding was easy - tinned treacle pudding (turned out and cooked in the oven) with instant custard.
