We eat rather a lot of carrots, and I do get bored of boiling them, so our lad came up with a new way of enjoying them.
Par boil them and drain really well, you can let them stand for 5 mins or so just so's they do completely drain.
Then, put them in a baking tin and cover liberally with honey and caraway seeds, and roast them for 15 mins or so in the oven at gas mark 5 , making sure you turn them over a couple of times.
If possible I use the little,whole carrots that you can get but they do taste just as good with chunks of the bigger carrots.

Sounds good. I cook mine in a wee bit of orange juice, butter and honey, after having boiled them in water for a few minutes.

Nephew did the snarpips for Chrimbo dinner.... peeled and cut into chunks... sprinkled with cracked black pepper, and drizzled in honey - then shoved in the oven....
