Since Lily asked for it...
I improvised this once combining 6 different Tiramisu recipes, 'cos I didn't have all the ingredients for any of them.
Serves 3-4
250 g Mascarpone cheese 2 tbsp Sugar 0.5 - 1 dl Water 5 tbsp Instant coffee (the 2 above can be replaced with some very strong coffee) 5 tbsp Marsala wine (or 2-3 tbsp of Brandy) 3 tbsp Milk or cream 12-16 Amaretti biscuits
Crumble biscuits into fine bits. Boil the water, stir in instant coffee. Soak biscuit crumbs in coffee - don't overdo the coffee, just use enough to get an even brown colour. Put crumble to bottom of dessert dishes or glasses - I usually use wine glasses. Beat together Marsala, Mascarpone, sugar & milk (cream). Spread mixture on top of bisquit crumbs. Put in fridge to cool. Drool. Finish off the bottle of Marsala. Before serving, sprinkle with cocoa powder. Do not weigh yourself for a fortnight.
As you may have guessed, I didn't have any eggs in the house, while making this for the first time!

That sounds scrummy and I'm gonna make some in the week. I like the idea of no eggs - much easier ;D

A friend of mine uses much the same recipe but replaced the biscuit crumbs with sponge fingers. Unfortunately she doesn't always soak them quite enough and they tend to float to the surface!

Glen I tried them once, soaked them too much, and made a mess of it. For my taste, the almond flavour from the amaretti adds a lot of kick - it can be a bit bland otherwise.
