If you find this at the deli counter in your local supermarket I urge you try some.
It's made by the Ilchester Cheese Company, and is advertised as mild cheddar though I would say it was more like double Gloucester...BUT it's got a kick to it. Full of jalapeno and chilli peppers, it's absolutely delicious.

A few years ago, I worked on the deli counter, and had to try all the cheeses, the Mexicana, was not one of my favourites. I would advise having a taste before you buy, as it is not to everyone's taste.

I love it!
Closest I can get to it in the commissary is Monterey Jack slices with jalapeno pepper bits in it. Nice, but not as much of a kick.
