I've made this a few times now and it's scrummy!!
1 tbsp oil Streaky bacon Onion 1 tbsp flour Pint of fish stock 3/4 pint of milk Bouquet garni 4-5 potatoes peeled and diced 1/4" size Salt and ground black pepper Pinch of mace Pinch of cayenne pepper Piece white fish - skinned boned and cubed Piece smoked fish - "" "" "" Small pack of prawns (other shellfish could be used as well) Tin sweetcorn Chopped parsley and chives
In a large pan fry off bacon until crisp, add chopped onion and cook at lower heat for 5 mins. Stir in flour and cook for 1-2 mins Add fish stock, milk, garni and potatoes Season well with S + P, mace and cayenne Simmer for 10 mins or until spuds are almost cooked Add fish for 5 mins then corn/prawns/shellfish to warm through Serve in deep dish with parsley, chives and plenty of bread and butter
