How much coffee do you need to put into cake mixture to get that proper coffee taste?
As per Mrs.Beeton's recipe, I diluted 15ml of coffee in 10ml of water, it went into a paste so I added a drop more water....result, you can hardly taste the coffee at all !
Perhaps I should use espresso coffee instead...any ideas anyone?

I would mix probably three to four teaspoons of espresso powder (there are some excellent instant brands around - I think Percol was the one I liked, but am not now sure), with boiling water to dissolve and add that to the mixture once cooled.

Hmmmm, think I'll try espresso powder next time, I have 2 types so will carry on experimenting...it's a hard life being a cake maker,lol.

I use Camp Coffee for my coffee cake, two to four teaspoons is plenty.

try:3-4 teaspoonfuls of instant coffee in a little hot-water [with one teaspoonful instant chocolate powder & a similar quantity of vanilla extract].
