I am feeling nostalgic and want to make a pudding to follow our roast lamb. In my mind, Eve's pudding, as my mother made it, was a pastry base with stewed apples and then a victoria sponge on top. Looking up recipes via google pastry doesn't get a mention.
Is it a case of nostalgia not being what it used to be?

Possible, but unlikely, she claimed she got vertigo every time she stepped in the kitchen.......

Maybe too late for today but perhaps another time.
Eve's PuddingFluffy, soft, buttery apple is hidden under a light and golden sponge topping. Serve hot from the oven with a jug of thick Channel Islands cream.
Vegetarian Preparation time : 30 minutes Cooking time : 35 minutes Total time : 1 hour 5 minutes
Serves: 4 Ingredients 2 Bramley apples (about 500g in total) 1 tbsp lemon juice 2 tbsp water 90g soft butter 100g caster sugar, plus 2 tbsp 100g self-raising flour 2 eggs
Method Preheat the oven to 180°C, gas mark 4. Peel, core and chop the apples into a pan with the lemon juice and water. Stir, cover and cook briskly for 5 or 6 minutes until the apples are soft enough to almost purée when stirred. Add 15g butter and 2 tbsp caster sugar and stir to slacken. Transfer to a 900ml-capacity, ceramic gratin dish, about 5cm deep. Leave to cool while you prepare the topping. Cream 75g butter with 100g caster sugar until fluffy and light. Sift the flour into a bowl and whisk the eggs in a second bowl. Fold the flour and egg in alternate spoonfuls into the sugar mixture until blended. Spoon the mixture over the apples. Bake for 30-35 minutes or until the topping is puffy and golden. Serve with a jug of cream.

I made it. I used the Alan Bennett recipe from A Taste of my Life. Almost identical to the one above. It was OK but didn't taste like my mum's. I think she had more cake than I did.
Oh well, I tried.
