Dead easy!
* Pack of soup veggies from supermarket (celeriac, carrot, leek, cauliflower, parsley if you can't find them - Aldi and Lidl carry them, I know that much. Look for 'suppegemuse').
* One butternut squash, or bag of pre-diced if you can find it/can't be bothered peeling and dicing your own
* One large or two small sweet potates, peeled and diced
* Chicken or vegetable stock, enough to cover the veggies
* Light olive oil
* garlic pepper, red pepper flakes and celery salt to season
Prep veggies.
Sweat veggies in oil till tender.
Cover with stock to about an inch or so above the veggies.
Bring to boil.
Simmer for twenty minutes or until squash and sweet potato mash up on the fork.
Blitz till smooth.
Serve!
