A recipe thats fail safe for rice. Even the blokes can manage it.. 1 Cup of Rice. Long grain or Brown 2 cup water or stock 1/2 onion chopped fine 1/2 red/yellow/green pepper chopped up fine 2 cloves garlic. however you like it peas as many as you like frozen shrimp about the same amount as the peas 1 tbls of good olive oil knob of butter slat and pepper. no salt if using stock Method Heat oil in large heavy based pan or casserole Add onion and fry till just starting to go golden, not brown. Now add both the pepper and garlic stir all the time and add a good few turns of the pepper mill. Add the rice and stir round till all the grains are coated in the oil and the rice is starting to fry a good 4 Min's should do the jog. Now add the liquid stir a couple of times and let it all come up to the boil. Let it boil hard for a good 4-5 Then turn right down as low as you can without turning it off and put a tight fitting lid on the pot. Now the hard part.... Leave it alone. Don't touch it. Don't look at it. Do not lift the lid. For a good 15 Min's. Now put in your butter, shrimp and peas just bung em in quick and put the lid back on. turn of the heat and move the pot to another ring. leave to stand for about 5-8 Min's depending on how big your shrimp are and how many peas you've put in.. Then give it a stir and serve in a warm bowl... Enjoy..

I have been just tootling through looking for ideas and love the look of this although I would subsitute the seafood for chicken I think. I am going to do it at the weekend

All sounds delicious, with or without chicken.. or even both! I like really rich unctuous rice dishes, especially risotto (probably because I cook my rice till it's like pudding anyway!), so I'm definitely going to try this.
