Pancakes!
My preference for Shrove Tuesday is to have savoury pancakes first, followed by sweet ones.
What goes in to the savoury ones does vary (partly depending what needs using up). If I'd remembered in time (before we had stir-fry last night) it would have been the remains of Sunday's chicken!
In the end it was quite simple...
Two largish leeks Two largish peppers (one red one orange) One packet of bacon
The leeks were quartered lengthwise then sliced. I also cut the peppers into smallish dice (1/8 to 1/4 inch I guess). I roughly cut the bacon into pieces. All this was then cooked in a frying pan with a minimal amount of oil for 15 minutes or so.
I'd made the batter for the pancakes earlier and let it stand (usual recipe, with 2 eggs and fairly thick).
I also made up a packet of cheese sauce mix (yes, I know it's cheating).
Then it was just make fairly thick pancakes*, roll the bacon/leek/pepper mixture inside and put in a baking dish. Pour the sauce over and put in the oven - 200C for 20 mins should do.
After this I thinned the batter with water a bit before making the sweet pancakes (served with lemin juice and sugar or golden syrup as preferred).

*A bit late but if you don't know it, always pour all the oil out of the pan and throw the first pancake out of the pan away.

Another nice way with pancakes -
Make up a similar filling to a fish pie - any mix of fish, boiled eggs, frozen peas etc. Mix in enough cheese sauce to bind together. Fill pancakes and roll up, put in baking dish and put more cheese sauce over. Top with paprika and bake till golden and bubbling.
Yummy!
ps. This is a good 'storecupboard' standby - I often use frozen fish, poached and flaked and sometimes I cheat and buy ready made pancakes.

Since we discovered wholemeal pancakes that are a tradition in Brittany called Galettes. I make wholemeal pancakes and we had some filled with wild mushrooms in a creamy sauce. Followed by the more traditionally English version filled with vanilla icecream and a hot Grand Marnier sauce. Hic!
All washed down with a couple of glasses of vin blanc. Consequently having nodded off in the armchair I missed the Chanel 4 news. I think I need to forego the pancakes next time.
