How thick is chunky wool?
I know double knitting is like 6 ply so I could mix 2 x 3 ply wools together but I can't remember how thick chunky is. I have lots of wool and daughter wants a particular chunky top.. I fank ewe

I'm about to be of no real help at all, but I did recently knit a cardi combining two double knit yarns. It came out what I would describe as 'chunky' but it was knitted to a specific pattern that required the two yarns to be used. So like I said, no help at all but an interesting point.

Knit a test square and if it's too small, try again on bigger needles and vice versa if it's too small.

I suspect a lot depends on your tension, too.
Not that I can knit, but I think crochet and knitting have that in common. So, if you tend to work too tight, bigger needles. Or smaller if you work too loose.
I've been using yarn that called for a 5mm hook, and working it with an 8mm. That's about right.
Can't keep the tension even worth a darn, though, on the afghan I'm crocheting for the baby. It's lost about ten cm widthwise over thirty rows, so I am going to have to be creative with the edging, I think. No time to unravel it all and start over, no time!

I used to regularly use 2 strands of double knitting for chunky patterns if that is any help "How thick is chunky wool?" - it's my experience that most wool spinners seem to match their wool to their patterns. There doesn't seem to be a standard. As suggested you probably need to knit a gauge square.

It depends how the wool is spun.... some "chunky" wools are only single ply.. but spun loosely, so provide a thick strand of wool ... if that makes sense
