I ate a lovely corned beef hash at a friends recently but it was very different to the version I make and have taught my daughter. I would be interested to hear other people's versions.

Oddly enough although I like corned beef I don't like it cooked! I love sliced corned beef (packet not tin) with cheesy mash and beans though.
Thinking about it maybe it's a throwback to my memory of my mum's hash!

gosh I love hash, the last time I ate it was when someone made an extra portion for me, yummy! sadly I've never had the nerve to try and make it myself, mainly because it would be just for me! when tyg2 was still at home sometimes i would make a sort of pasty thingy with CB and a big slice of cheese and a squirt of ketchup - it looked a mess but was scrummy. ooooooooooo i'm hungy now! anyone care to share an idiot proof recipe? xx

At its simplest I just fry off some chopped onion and garlic, add cubed corned beef and fry that, mixing it all together, then serve!
The more serious recipe though is as follows - sorry I don't really do measured quantities so you'll have to work them out for yourself.
Put a sufficiency of potatoes in the microwave to cook - skins on for preference.
In a cast iron frying pan fry chopped onion (fine or coarse to taste - I prefer coarse) until just browning. Add the cubed corned beef, finely chopped garlic, tomato puree and Worcester Sauce.
Keep mixing together and mashing as the corned beef breaks down, but don't let the bottom burn. Meanwhile dice the cooked tatties to about 1/4" cubes. Take the corned beef off the heat, spread the potato on top then sprinkle with mixed herbs and grated cheese.
Put into a pre-heated oven (hence the cast iron pan) for about 20 minutes or until the cheese melts - if necessary put it under the grill to brown the cheese a bit.
Serve!
Another corned beef hash recipes is my mother's Desperate Dan Cow Pie. Nothing very complex, cook the corned beef and onion much as above, but then mix in mashed potato. Put into a shortcrust pastry pie case, top and bake.

Glen it sounds daft and they sound lovely but I still can't get my head around cooked corned beef!
That said, the pie idea but with, say ham, sounds scrummy and one I might give a go! Thanks!

Jean have you never tried sliced CBon toast - wack it under the grill for a bit and then top it with cheese and melt it - scrummy (having said that I can't fancy tuna melt either) xx

Glen yours sounds lovely. Mine is similar, onions and garlic fried in a little olive oil, cubed corned beef added, gently fried - kept on the move. Cubed boiled potatoes added, gently mixed, some worcestershire sauce to taste. Put under the grill to brown a little and serve... could someone bring me some please...right now!

Corned beef hash to me is....
Mashed potato - hot corned beef peas - cooked carrots - diced and cooked
break up corned beef into mash, mix together thoroughly (so corned beef sort of flakes) add peas and carrots - stir well
Serve and enjoy!
