Apple have only released the mono remasters as part of a (very expensive) limited edition box set. That's what you get when accountants and lawyers run the company, rather than musicians and dreamers (albeit the lads nearly went bankrupt in the late '60s with all the waste, excess and mis-mangement). The happy(ish) medium disappeared with the departure of the (now sadly late) Neil Aspinall as Apple boss a couple of years ago.
Still, to the music:
Up to and including "Pepper", the albums were designed and intended to be listened to in mono. John Lennon himself insisted that "Revolver" and "Pepper" must be listened to in mono.
Examples of how primative stereo was in the mid-sixties are evidenced by the inclusion of the original '65 stereophonic mixes of "Help!" and "Rubber Soul".
Tracks like "Eleanor Rigby", "Nowhere Man" and "Your Mother Should Know" are eminently more listenable-to in mono.
You'll find both subtle- and quite different- versions of the stereo mixes you may be used to- such as "Please Please Me", "If I Fell", "I Feel Fine", "Tomorrow Never Knows", "Within You, Without You" and the Sgt Pepper Reprise.
The greatest difference between the mixes is evidences on the White Album- "Back in the USSR", "Piggies", "Don't Pass Me By" and "Helter Skelter", for example.
The remasters boast a marvellous quality of sound- witness the reverb on "Paperback Writer" and the electric piano on "Hey Jude".
If you've got the money, spoil yourself.......and look after the set, 'cos it's a collectors' item already!!
Finally, enjoy!! But be warned (as my friend Gavin, who isn't an anorak like myself, discovered), "Abbey Road" (their finest moment, in my view) and "Let it Be" were never mixed in mono (neither was their last number one single, "Ballad of John and Yoko"/"Old Brown Shoe"). You'll have to get the stereo box set (which you can also buy individually) for these.

If I were going to listen to them in "mono", then I'd want to do it as nature intended - on a record player with a single mono speaker, exactly as released in the 60s - not some digitally enhanced CD version of it. I personally think the mono box set is rediculously overpriced and just an example of Apple cashing in.
I can appreciate more the stereo remixes to bring that up-to-date modern feel to the recordings, to make the most of modern technology and allow the group to compete better against today's recordings. That said..still on the expensive side for me. My own Beatles collection is a mix of vinyl, tape and some CDs of commerically released albums, as well as plenty of Bootlegs.
